Rich, succulent pork belly with its perfect balance of meat and fat, paired with the sharp, aromatic bite of fresh scallions. It is full of aroma and sweetness. It has a strong, sharp flavor and a relatively firm texture.  If you can&#8217;t find this type, use a leek or a more common scallion, but only the white part as a replacement.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1875\" height=\"1250\" src=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-both.webp\" alt=\"scallion and pork belly stir fry | chinasichuanfood.com\" class=\"wp-image-35231\" srcset=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-both.webp 1875w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-both-768x512.webp 768w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-both-1536x1024.webp 1536w\" sizes=\"(max-width: 1875px) 100vw, 1875px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 lb (200g) pork belly, cut into thin slices (about 1\/8 inch thick)<\/li>\n\n\n\n<li>1 Chinese scallion, cut into 2-inch segments. Or you can also use 6-7 scallions (white part only) as a replacement<\/li>\n\n\n\n<li>5 scallions, white part only <\/li>\n\n\n\n<li>5 cloves garlic, minced<\/li>\n\n\n\n<li>1 inch fresh ginger, sliced<\/li>\n\n\n\n<li>1 tbsp. light soy sauce<\/li>\n\n\n\n<li>1 tbsp. vegetable cooking oil <\/li>\n\n\n\n<li>1\/2 tsp. salt<\/li>\n\n\n\n<li>1\/2 tsp. sugar<\/li>\n\n\n\n<li>1\/8 tsp. white pepper <\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"2000\" height=\"1333\" src=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-and-pork-belly-stir-fry-ingredients.webp\" alt=\"scallion and pork belly stir fry| chinasichuanfood.com\" class=\"wp-image-35216\" srcset=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-and-pork-belly-stir-fry-ingredients.webp 2000w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-and-pork-belly-stir-fry-ingredients-768x512.webp 768w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2025\/11\/scallion-and-pork-belly-stir-fry-ingredients-1536x1024.webp 1536w\" sizes=\"(max-width: 2000px) 100vw, 2000px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">How to prepare Chinese Large Scallion<\/h3>\n\n\n\n<p>Lay the scallion flat on your cutting board. Using the flat side of your knife blade, gently smash\/press down. This helps break down the layers slightly.  After that, cut the scallion diagonally into segments about 2 inches long.  So we can get more surface area while still maintaining the crunch of the scallion, since we don&#8217;t need to cut it into super-mini pieces.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Step by step <\/h2>\n\n\n\n<p>Thinly slice your pork belly; either keep the skin on or remove it. I love to maintain the skins, although they can be a little bit hard to chew after cooking. If you are not good at this, freeze your pork belly for 30 minutes, then cut it into thin slices like cucumbers.<\/p>\n\n\n\n<p>We don&#8217;t need to marinate the pork belly. This may take some time, but it is the key step for a well-flavored scallion and pork belly stir-fry. Mix for another 5 seconds.
