And surely it is a dish I make from time to time.<\/p>\n<p>Tofu is always considered as a good replacement for meat in many Chinese dishes. Besides this kung pao tofu, you still have other options like <a href=\"https:\/\/www.chinasichuanfood.com\/kung-pao-mushroom\/\" target=\"_blank\" rel=\"noopener\">Kung pao mushroom<\/a>, <a href=\"https:\/\/www.chinasichuanfood.com\/kung-pao-cauliflower\/\" target=\"_blank\" rel=\"noopener\">Kung pao cauliflower<\/a> and <a href=\"https:\/\/www.chinasichuanfood.com\/kung-pao-lotus-root\/\" target=\"_blank\" rel=\"noopener\">Kung pao Lotus root<\/a>.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li class=\"ingredient\">1 pound firm tofu or extra firm tofu<\/li>\n<li class=\"ingredient\">3 tablespoons vegetable cooking oil<\/li>\n<li class=\"ingredient\">1 green pepper, cut into small pieces<\/li>\n<li class=\"ingredient\">1 red pepper sliced<\/li>\n<li class=\"ingredient\">3 to 5 dried red chili pepper (I use whole pieces to reduce the hotness)<\/li>\n<li class=\"ingredient\">1\/8 teaspoon whole Sichuan peppercorn<\/li>\n<li class=\"ingredient\">2 garlic cloves, minced<\/li>\n<li class=\"ingredient\">1 inch root ginger sliced<\/li>\n<li class=\"ingredient\">2 leek scallions, cut the white part into small sections<\/li>\n<li>1 tbsp. roasted peanuts<\/li>\n<\/ul>\n<div class=\"ERSSectionHead\"><strong>Stir-fry Sauce:<\/strong><\/div>\n<ul>\n<li class=\"ingredient\">\u00bd tablespoon dark soy sauce<\/li>\n<li class=\"ingredient\">1 tablespoon light soy sauce<\/li>\n<li class=\"ingredient\">a small pinch of salt (around 1 teaspoon)<\/li>\n<li class=\"ingredient\">1 inch ginger grated<\/li>\n<li class=\"ingredient\">1 tablespoon chopped green onion<\/li>\n<li class=\"ingredient\">2 garlic cloves, finely chopped<\/li>\n<li class=\"ingredient\">1 tablespoon cornstarch<\/li>\n<li class=\"ingredient\">1 tablespoon vinegar<\/li>\n<li class=\"ingredient\">2 tablespoons water<\/li>\n<li class=\"ingredient\">2 teaspoon sugar<\/li>\n<\/ul>\n<p>Cut tofu into 2cm dices, add oil and then fry the tofu pieces over medium fire until golden on one side.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-11532\" src=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-7.jpg\" alt=\"Kung Pao Tofu |chinasichuanfood.com\" width=\"650\" height=\"433\" srcset=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-7.jpg 650w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-7-300x200.jpg 300w\" sizes=\"(max-width: 650px) 100vw, 650px\" \/><\/p>\n<p>Then turn over and make them golden brown on four sides.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-11539\" src=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-8.jpg\" alt=\"Kung Pao Tofu |chinasichuanfood.com\" width=\"650\" height=\"433\" srcset=\"https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-8.jpg 650w, https:\/\/www.chinasichuanfood.com\/wp-content\/uploads\/2014\/01\/Kung-Pao-steps-8-300x200.jpg 300w\" sizes=\"(max-width: 650px) 100vw, 650px\" \/><\/p>\n<p>In your wok, hot oil and fry dried red pepper and Sichuan peppercorn until aroma. Pour in the sauce and give everything a big stir fry to make every piece well-coated. Ad toasted peanuts and the remaining leek onion sections.
