This dish does require a lot of oil to fry, and adding eggs can absorb some of the oil, but it all depends on your preference

Only if using alot of oil (more than the 1 T called for) I would get a delicious crispy texture. I think eggs were missing for a better texture. My opinion ! I’m going to bite the bullet and try the rolled out version.
